Mary's Honey Butter

For about twenty years we have raised bees and harvested honey from Basswood trees and wild flowers on our property in Big Lake. We've used the honey making bread, eating it plain or in a variety of recipes. One of our family's favorites is Cinnamon Honey Butter.

During the campaign we decided to put a short recipe on the back of my business cards. Though I have made Cinnamon Honey Butter for years it was just a little "this and that" recipe. So, taking a little time from the campaign trail I headed to my kitchen to measure and taste until I had it just right.

Eat and enjoy, it is tried and tested. You won't get “stung” with this recipe.

Ingredients:

1 lb. or 2 cups butter
3/4 cup honey
2-3 tablespoons cinnamon (to taste)

Directions:

Soften butter
Whip ingredients together for 2 minutes
Keep refrigerated

Raspberry Jam

Ralph (Mary’s husband) plants raspberries
Ralph waters, weeds and trims raspberry plants
Ralph picks raspberries with grandchildren
What raspberries are left are brought into Mary’s kitchen
Raspberries are carefully cleaned and so are grandchildren’s hands
Buy box of Surejell from grocery store
Use 3 cups of slightly mashed berries in the recipe from the paper in box
Follow the rules in recipe
Let sit for a few minutes… the jam too
Eat and enjoy amidst love and laughter
If any left, the raspberry jam freezes well, or send home with grandkids
Makes 5 cups before Ralph and grandkids eat
